The Zest Coffee Experience Studio at 67 North Street, Richmond is where that world opens up. It is not a café. There are no lattes here. What's here is something rarer: a guided journey from farm to cup, led by some of the most knowledgeable coffee professionals in the country, using coffees that are quite simply unlike anything else available in Australia.

That's the spirit behind every session at the Richmond Studio. Zest's team have been to these farms. They've processed coffee with their own hands. When they guide you through a flight, they're not reading from a script — they're sharing something they've lived.

WHAT IS A COFFEE SENSORY FLIGHT?

A sensory flight is a curated tasting experience built around a single world-leading producer. You choose a flight from the rotating menu, and your Zest host brews three distinct coffees - each one a different expression of the same origin, revealing how processing, varietal, and terroir shape what ends up in your cup.

The 30-minute pour-over flight is the entry point. For those who want to go deeper, add $60 to any flight to upgrade to the full one-hour Sensory Experience, where your host takes you through the complete sensory language of coffee - fragrance, aroma, flavour, acidity, body, balance, and sweetness - learned directly in the cup.

Or surrender to the Zest Omakase: tell your host whether you're feeling funky or calm, and they'll build you a flight from whatever is most exceptional on the day.

El Vergel Estate - $60

Three unique naturals from Shady and Elias Bayter at El Vergel Estate, Tolima, Colombia - including the rare Ethiosar hybrid varietal and the remarkable Yirgacheffe grown outside its Ethiopian homeland, both naturally processed at 1,750 MASL.

Flavours: Kiwi, orange, watermelon, bergamot, apricot, cherry, black plum, nectarine

Finca Candelaima - Alejandra Guerrero - $70

Three exceptional fermentations from female producer Alejandra Guerrero at Finca Candelaima, Cundinamarca, grown at 1,800 MASL. A Sudan Rume Natural Anaerobic, a Honey Geisha, and a Natural Anaerobic Geisha — each processed with remarkable care and precision over 21 days in a marquesina greenhouse.

Flavours: Chamomile, white nectarine, melon, pear, lavender, raspberry, pink grapefruit

Varietal Highlight: Sudan Rume - $80

A rare spotlight on one of coffee's most complex and floral varietals, explored across three processing styles from two world-class Colombian producers. Includes lots from Rigoberto Herrera at CGLE (Las Margaritas farm) processed as both a Natural and a Hybrid Washed, alongside Alejandra Guerrero's Natural Anaerobic from Finca Candelaima.

Lohas Beans - $90

Competition-grade lots from three celebrated Colombian producers making waves on the world stage. Jhonathan Gasca's Pacamara Natural from Finca Zarza, Jhoan Vergara's Red Bourbon Natural from Finca Las Flores (featuring advanced culture-driven fermentation), and Nestor Lasso's rare Ombligon Natural from Finca Diviso — a remarkable Ethiopian landrace variety.

Champions Flight - $115 ★ 2026 Australian Brewers Cup

Simon Gautherin's personal collection - the three Geishas he used to win the 2026 Australian Brewers Cup. This is a once-in-a-generation opportunity to taste championship-winning coffee in the hands of the team that helped him get there.

  • Jhoan Vergara - Pénas Blancas / Geisha / Washed: Peach, mandarin, guava, pink grapefruit. Simon's description: the best washed coffee he has ever tasted.
  • Diego Bermudez - Finca El Paraiso / Geisha / Antimaceration Washed: Lavender, rose, mangosteen, red plum. Seven days of near-vacuum fermentation produces extraordinary aromatic intensity.
  • Nestor Lasso - El Diviso / Geisha / Natural: Peach, papaya, white honey, cacao nibs. A rare departure for the Lasso brothers, selected for its intensity, versatility, and distinctive citrus lift.

Geishas Around the World - $150

The Queen of coffee varietals, cultivated in the most unexpected places on earth. USA (California), Denmark (grown in a greenhouse!), Spain (Canary Islands, fermented with volcanic water and ash), Taiwan (DNA-verified plants), Thailand, Philippines, Panama, and Colombia. Species Discovery - $150

Taste beyond Arabica. This flight explores the coffee family in all its diversity — Robusta, Racemosa (from wild coastal forest in South Africa), Eugenoides (a genetic parent of Arabica, naturally low in caffeine), Stenophylla (from Ivory Coast, recently rediscovered), and Liberica (from Vietnam, natural Koji process). Exceptionally rare, difficult to source, and seldom tasted side by side anywhere in the world. Ask your experience team what's in stock.

Zest Omakase - $100

THE CHAMPIONS FLIGHT - A STORY WORTH TELLING

One flight deserves special mention. Zest's own Brand Ambassador, Simon Gautherin, won the 2026 Australian Brewers Cup - one of the most prestigious coffee competitions in the country. The Champions Flight is his personal collection of the three Geishas he used to do it.

At $115, this is an extraordinary opportunity to taste competition-winning coffee in the place it was sourced, prepared by the team that stood behind Simon throughout his journey. The headliner - a washed Geisha from Jhoan Vergara at Pénas Blancas - is the coffee Simon described as the best washed coffee he has ever tasted. Its intensity, clarity, sweetness, and acidity are exactly what you'd expect from a champion's first choice.

MEET YOUR HOST: SERGII TELVAK

The Studio Manager bringing your flight experience to life is Sergii Telvak - a coffee professional with a creative eye, a warm approach, and a passion for specialty coffee that comes through in every cup he brews and every story he tells. If you've come across his content at @slightly_overcaffeinated, you'll already know what he brings to the experience.

Behind him is Aryan Aqajani - Zest's Head of Coffee and a qualified world competition judge - who personally selects every origin that appears on the menu. And on occasion, co-founder Anton Greenfield himself takes to the bar, much to the delight of guests who have waited months for the privilege.

Do I need any knowledge of specialty coffee to enjoy it?

Not at all. Many of the most enthusiastic Google reviews come from curious beginners. Your host meets you exactly where you are and builds from there. No prior knowledge required - just an open palate.

What's the difference between the pour-over flight and the full sensory experience?

The pour-over flight (30 minutes) is a guided tasting of three exceptional coffees with producer and processing context. The full Sensory Experience (one hour, add $60) goes deeper into the language of coffee evaluation - guiding you through fragrance, acidity, body, sweetness, and balance in a structured, hands-on way.

Can I purchase coffee beans after my visit?

Yes. The full Zest retail range is available in-studio - signature blends, rotating microlots, Special Reserve releases, and brew gear, all freshly roasted from the Zest roastery each week.
