Thanks to our great mates at Forest Coffee, we have sourced this wonderful coffee from the coffee maverick that is Wilder Lazo. While we are just finishing up an incredible special reserve series, featuring an delightful Sidamo and a wonderful Geisha from Wilder, we are excited to release a coffee perfect to spice up your everyday brew, courtesy of Lazo.

Wilders farm, El Rubi is located in Acevedo, Huila. He ventured into coffee in 2017, and has since dove deep into distinctive coffee varietals. He benefits from his background in genetics and an intent approach to learning more, meaning he is able to push specialty coffee production past boundaries.

This particular lot is an SL28 variety which has undergone an anaerobic fermentation. The cherries are sealed in plastic bags and inoculated with yeast, and fermented in this oxygen free environment for 200 hours (8.3 days!). The cherries are then dried as a natural on raised beds for 10-15 days ensuring even moisture. The coffee is then stabilized in GrainPro bags for 35 days without exposure to sunlight.
