Whilst we all love and know Ethiopia for its delicate and delicious coffees, a lack of traceability to the farm of origin for these lots is still an ongoing issue. A majority of the coffee exported from Ethiopia is processed through the Ethiopian Coffee Exchange. This is a concern because, as green bean buyers, there is no way of knowing whether the smallholder farmers are paid fairly for their labours.

The ECX process begins with the smallholders, who take their coffees to mills like Limu, where this coffee was processed, who then send the parchment coffee to delivery warehouses.

Here the coffees are simply labelled according to their region and graded based on cup and physical qualities. This grading then determines which of the 81 generic grades of coffee each lot falls under. This details processing; washed, natural etc, flavour, usually just a typical flavour from the region and a grade of 1-9 based on a defect count, grade 1 being the best.

While we will still continue to push for great traceability in Ethiopia, for now we want to share with you some amazing coffees and celebrate this world-renowned coffee country.
