Producer Info

Over the last 12 years, Diego Bermudez has tweaked his processing method to perfection, and this current crop shows his efforts are paying off cupping over 90 points. The cherries are fermented for 36 hours in mucilage at a controlled temperature of 19C. They are then mechanically dried in a 57% humidity environment for 28 hours. Temperate humidity and high Pacific winds contribute to the tropical notes of the coffees grown on Finca El Paraiso.
