The Fermentation Project is an incredible initiative by the renowned James Hoffman to share his knowledge of fermentation of coffee with the global coffee community.
This year, James has partnered with leading processor, Lucia Solis, to explore the fermentation step within the washed coffee process. The project brings you the same coffee from San Miguel Urias coffee farm in Antigua Valley, Guatemala. The farm is owned by Hecotor and Lilian Leal. This particular lot is a blend of 85% Caturra, 15% H1 and a touch of Bourbon.
Lucia and James have fermented the same lot 4 ways:
/ Mechanically Demucilaged (washed)
/ Wild Fermentation (washed)
/ Lactobacillus inoculated (washed)
/ Yeast inoculated (washed)
