This Yellow Bourbon brings incredible value for money, enabled by our longstanding relationship with El Vergel and Forest coffee. Forest Coffee was founded in 2019 by Shady & Elias Bayter and their mother Martha after running their farm, El Vergel, for 9 years. Today, Forest has grown into a thriving network of 250 coffee-growing families, exporting wonderful Colombian coffee to the world.
This lot come from their family farm, El Vergel Estate, which the team at Zest have stayed at 3 times over the past 10 years.
The Yellow Borbon cherries are harvested at peak ripeness before a brisk fermentation of 48 hours. This builds sweetness, while not creating an overly funky coffee. The coffee is then sun-dried in full cherry for 8 days as a natural. The cherries the stabilise in Grain Pro for 35 days before milling.
