Jorge Rojas has taken responsibility of his farm, Finca El Proceso, since he was 12. This was becuase he lost his father. Since then, Jorge has devoted his life to coffee with the dream of producing high-end specialty coffee. Fair to say he’s achieved his dreams!
One if Jorge’s standout coffees is Chiroso. Like the famed Geisha variety, Chiroso is a heirloom variety with Ethiopian roots.
This particular Chiroso lot has been through a short fermented natural process. In planning this lot, Jorge was insistent: ‘only two-and-a-half days, okay!’. The goal of this shorter fermentation was to intensify fruitiness and flavour without adding heaviness. Ultimately, this process was selected to highlight the variety’s inherent fruit-forward character.
