Carolina is a young coffee producer that also works as a taster in a quality control lab alongside her brothers. Her parents own the farm Dos Quebrados, where the family has produced specialty coffee for over 15 years. Carolina’s dream is to give greater visability to her farm and her families coffees through attending international events and competitions. She also wants to continue to refine her craft by continuing with training in coffee processing.
This particular lot is from the Wush Wush variety, a very rare and unique varietal that originated in Ethiopia. She has processed this lot as a Natural to complement the fruity and floral flavours that are characteristic of Wush Wush. The cherries are picked and sorted before drying in full cherries. This allows the sugars from the fruit to break down and impart sweet flavours to the coffee. The cherry’s are then pulped and processed for shipping.
